Chard and Feta Puff Pastry Rolls


Yotam’s boureka filling meets Verena’s sausage rolls in this delightful fusion recipe. These golden, buttery rolls are packed with savory spinach (or chard) and feta filling, encased in flaky puff pastry. They’re perfect for brunch or a special breakfast. Serve with a side of ajvar paste or your favorite dipping sauce for extra flavor.


These rolls are also wonderfully versatile—make them ahead of time, store in the fridge, and bake fresh when needed. A true crowd-pleaser for cozy mornings or holiday gatherings!


Ingredients


For the filling:

• 2 tbsp olive oil

• 1 tbsp unsalted butter

• 1 medium onion, finely chopped

• 2 garlic cloves, minced

• 200g fresh spinach (or chard), chopped

• 150g feta cheese, crumbled

• 1 egg, lightly beaten

• Salt and black pepper to taste


For the rolls:

• 1 sheet all-butter puff pastry (Can ve Gluten-free too), thawed if frozen

• 1 egg, beaten (for egg wash)

• Sesame seeds (for topping)


Instructions


Step 1: Make the filling

1. Heat the olive oil and butter in a frying pan over medium heat. Add the onion and cgard stems cook for 8–10 minutes until softened and beginning to brown.

2. Stir in the garlic and cook for 2 minutes.

3. Once cool, combine the cooked mixture with the chard, feta, beaten egg, nutmeg, salt, and pepper. Mix well and set aside.


Step 2: Prepare the rolls

4. Preheat your oven to 200°C (180°C fan) and line a baking tray with parchment paper.

5. Roll out the puff pastry on a lightly floured surface. Cut it into two long strips.

6. Place half of the filling along the center of each strip, forming a log shape. Fold one edge of the pastry over the filling and brush the other edge with egg wash. Roll tightly, ensuring the seam is underneath.

7. Brush the rolls with egg wash and sprinkle with sesame seeds, if using.


Step 3: Bake and serve

8. Cut each roll into smaller pieces (about 5–6 cm each), make a 1 cm cut on top of each piece and place them on the prepared baking tray.

9. Bake for 20–25 minutes, or until golden and flaky.

10. Serve warm with ajvar paste or your favorite dipping sauce.
