Date & cinnamon wholemeal waffles
Here’s recipe for a wholemeal waffle sweetened with dates that’s passed my blood glucose test.
Ingredients
4 dates roughly chopped
1 cup milk hot
1 tablespoon coconut oil
1 cup self raising wholemeal flour
1 teaspoon baking powder
1 teaspoon cinnamon
Pinch of salt
1 egg
Dark chocolate to serve
Method
Place the dates in a bowl, add the hot milk and let it soak for 10 minutes.
Strain the dates, keep the milk on side.
Put strained dates and coconut oil in a food processor and process until well chopped and blended. Slowly add the milk to the processor and process for 30 seconds.
Put the flour, baking powder, cinnamon and salt in a bowl. Mix all and make a well in the centre, pour in the milk & date mixture and the egg. Whisk together, starting in the middle, to create a smooth batter.
Use a ladle to pour the batter into your waffle maker and cook Until the waffle maker stops steaming.
Melt the chocolate in microwave or a small bowl nested on a pan of simmering water.
Serve waffles drizzled with melted chocolate.
